Cheesy Jalapeño Ranch Potatoes
Ingredients
3-4 medium Russet Potatoes
Shredded Cheddar Cheese
Jalapeño Ranch Seasoning
Salt and pepper
1 jalapeño diced
Wash and dice your russet potatoes and par boil them for 5 minutes. After 5 minutes drain and dry.
Add 2 tbsp of butter to cast iron, toss in your potatoes and season with jalapeño ranch. Cook for 7-10 moving them around every few minutes. You want them to sear a bit on all sides. Taste and add salt/pepper as needed. Add in your jalapeños and cook for a few minutes then add in the cheddar cheese and let it get melty and crispy in the edges. Serve and enjoy!
You can even drizzle some cilantro lime ranch for extra flavor!
