Spicy Broccoli Cheese Soup

There’s nothing quite like comfort food on these cold winter days. Broccoli and cheese soup has always been a favorite but we gotta spice it up. I like it spicy so let’s add in a kick!

16oz broccoli chopped - leave some bigger pieces

1 purple onion chopped

2 cloves garlic minced

2 jalapeños diced

1/2 tsp Paprika

1/2 tsp Nutmeg

1/2 tsp chili powder 

1 tbsp Dijon mustard 

2.5 cups chicken or veggie broth

1/3 cup heavy cream

1/3 stick butter

1 cup cheddar cheese shredded 

1 cup mango habanero gouda shredded

Sriracha @rubloveseasoning or other spicy bbq rub. Taste as you add. 

Salt to taste 


Sauté butter in Dutch oven. Addin jalapeños, garlic, paprika, chili powder and nutmeg. Mix for a few minutes, about 2 minutes. Add in broth and mustard and whisk together. Add in broccoli and simmer until soft, about 12-15 minutes. Use an immersion blender or normal blender to blend the bigger pieces of broccoli, onions and jalapeños. Add in heavy cream, reduce heat and add cheese in slowly allowing it to melt before adding more. Thicken with a corn starch slurry or xantham gum if needed.
