Sweet Potato Biscuits
In 2005 I had joined the USArmy and right in the middle of BCT we were forced to take a 2 week leave for Christmas. I was happy and upset about this but instead of flying home, I went to visit family in Alabama. My aunt had made these sweet potato biscuits with honey butter and I couldn’t stop eating them. I think I ate them all to be honest. Since then, not a holiday goes by that I don’t make this. This is my personal tradition now. I love these sweet potato biscuits and I hope you will too.

Ingredients
1-2 sweet potato
1/2 cup brown sugar
1 cinnamon stick
1 tbsp baking powder
1 tsp baking soda
400g ap flour
1/4 cup white sugar
1 tsp salt
1 cup butter milk
5 tbsp melted butter
Honey Butter
1 stick of butter
2 tbsp powered sugar
2-4 tbsp honey

Start by scrubbing your sweet potatoes and cutting them into smaller pieces. Place in a pot and cover with water. Add in the brown sugar and cinnamon stick. When the sweet potatoes are soft and fork tender, remove from the water and let cool.
Peel your sweet potatoes and mash. Remove about 1.5 cups for the biscuits.
Pre-heat your oven to 400. In a bowl mix the mashed 1.5cups of sweet potato with the butter and buttermilk. Once all combined add in everything else and mix until you have a very sticky dough. Knead the dough on a lightly floured surface for a few minutes until no longer sticky. Roll out the dough to almost an inch thick and press out your biscuits.
Place biscuits on a cookie sheet lined with parchment paper and brush the tops with honey butter. Place into the oven at 400 for 15-20 minutes. You don’t want the tops to burn so watch them at the 15 minute mark. When don’t, let them cool and brush with more honey butter. These biscuits come out fluffy, soft, sweet and very addicting!
